Something delicious. Something pretty. Remedies for a grey November day. The easiest Blueberry Almond Tart recipe.

It has been a particularly dreary month so far with the sun hidden behind a thick blanket of grey clouds here in Dorset, but despite the lack of sunshine, I have found solace in two new items that have managed to brighten even the gloomiest of days.

For those who have a fondness for blueberries, I have cobbled together this delightful and effortless recipe that is sure to become a household favourite. The simplicity of putting together this tart is a blessing, especially when the requests for more come pouring in from your loved ones. This treat serves as the perfect winter dessert. Its warmth along with the golden buttery slightly chewy frangipane, delicate crisp puff pastry and juicy blueberry goodness are always a winner complemented beautifully by a dollop of cream or custard. And let's not forget how it pairs exquisitely with a steaming cup of tea, adding a touch of cosiness to your winter days. It's got it all going on.

Let's have a look at the ingredients -

1 Sheet of All Butter puff pastry. I used Tesco's Finest.

Around 200g of blueberries.

100g Almond flour (ground almonds)

1 Large egg

50g soft butter

50g cane sugar

1tsp vanilla extract (almond extract if you prefer)

Zest of 1 lemon

Pinch of salt

Method-

Grease a 9in loose bottomed flan tin and line with your puff pastry.

Preheat your oven to around 170c.

  • Beat the butter with the sugar until creamy.

  • Keeping the blueberries aside add in all other ingredients to your butter and sugar mixture and beat until smooth.

  • Spoon the batter evenly into the pastry case and then scatter the blueberries over the top.

  • Sprinkle a little extra cane sugar over the top.

  • That's all there is to it!

Place in the middle of your oven for around 45mins. Please keep a close eye on the tart and be guided by your own unique oven settings the first time you bake, as my oven is quite temperamental, you may want to adjust the timing or temperature to suit.

Ensure your tart is golden and puffs up beautifully in the middle towards the end of cooking.

Now bring out from the oven with one of your new super pretty Caï Fahrel tea towels! Yes, the only other thing in your kitchen as pretty as this blueberry tart!

Let me know how you get on, I would love to see and hear about your baking results! Is this your new winter favourite?

Sending out a hug of early winter warmth,

Sacha
